Day In 'The Countryside' and a warming Rustic Pork Casserole


Why not start your day with some ham and eggs before venturing out into the Countryside. 





The Countryside

Deep into the wood where the Bluebells grow
Next to them the wild garlic will show
An old oak creeks with a century of age
With brand new shoots and the sun they crave
A crystal clear brook where the Sticklebacks nest
Flows into a stream where the bull rushes rest
The Swifts swoop down like dive bombing planes
In a field of mown hay set in country lanes
In the distance a Wood Pigeon coos
And the rest of the birds also voice their views
Beneath this sun filled clear blue sky
Hear the distinctive sound of a Pheasant cry
As dusk sets in with moon rising higher
far away glows a farmers pyre
Soon to come the majestic Bat
Skillfully collecting Moth and Gnat
These are the delights that the countryside brings
Peaceful bliss as the Nightjar sings

Then at the end of a lovely day, sit down and enjoy a cuppa and a poem.

Followed by a wonderful pork casserole cooked rustic style




This meal is an absolute lowcarb stunner, and one of our favourites. 



Ingredients: Serves two

2/3 pork chops (optional remove fat) and cut into small pieces
2 large leeks chopped
1 hand full of button mushrooms
1 large sliced carrot
1 table spoon of dried mixed herbs
Approx 1 pint of gravy stock
Salt and pepper to taste.

Method
Clean, cut and place all ingredients in a casserole dish or earthenware oven proof pot with lid.
Pour over the stock and cook at 190c in an electric oven 90 mins. Gas mark 5.

What could be easier, very lowcarb, real food and tastes great.
Perfect for a cooler Autumn evening.

The scenery in the first two pictures is of The Ribble Valley and Cumbria, when we were visiting earlier around The Lake District area. The third picture is slightly more seasonal and is courtesy of 'google' but the colour of the trees correctly represents some walks enjoyed in recent days.

We just love a pork casserole, just right for this time of year.

Where I live is home to some very high tech agriculture (but yet again the farmers are being shafted, a bumper wheat harvest means the price has dropped, though I doubt this will happen to the price of bread or breakfast cereal), yet there's still a lot of wildlife around and many farmers encourage it. Barn owl nestboxes, field margins planted with cover crops which enable a "second crop" of pheasants and partridges and feed the wildlife which eats the pests which reduces pesticide bills . . . now it's cooling rapidly perhaps I'll get the casserole dish out, haven't had pork chops for ages, though I have had wild boar sausages.

It is a shame that we can not somehow get the right balance in working together. The farmers do a great job and yet somehow they can be taken for granted and not get the rewards and thanks they deserve .... we need to work together more to get the balance right. A fine line between nature, farming and everyday needs.

Do try the pork casserole, it is lovely.
Those sausages sound tasty!

Currently the price of lamb is around that of venison. I don't mind paying it since it supports the hill farmers who keep this land going.
