Red Roasted Carrots


Now these are simply delicious. Although carrots do have more carbs. than vegetables like aubergine, courgettes, broccoli ... so if you are diabetic and may have a concern with blood sugar numbers, then test is best i.e. do use your meter. Read more about carrots and their nutrients here. 



Red Roasted Carrots
Combine a couple pinches (or a half teaspoon each) of cinnamon, paprika, chili powder, garlic powder and sea salt. Mix spices well in a bowl (or bag!) with 5 or 6 diagonally (oval) cut carrots plus 1TBS olive oil and 1tsp sesame oil.
Roast at 400 for 20 minutes on a cookie sheet until the edges are crispy brown. Enjoy warm!

Hello, the roasted carrots do look delicious. I love carrots but my hubby the one with diabetes is not a lover of any veggie. :(

We do eat quite a variety of vegetables, which occasionally does include a small helping / portion of carrots. But as Eddie is a Type 2 diabetic we tend to eat more of the lower carb / non starchy variety, which do not raise his blood sugar readings as high as say a potato does.
Vegetables such as these listed below appear on our menu plans:
aubergine/eggplant
courgette/zucchini
cauliflower
broccoli
peppers
mushrooms
kale
cabbage
brussels sprouts
spinach
leeks
... and more, this is not all!

I do not like carrots at all, but this recipe may have me rethinking that dislike for this vegetable! Looks so delicious!!

Can't speak for anyone else but I find the larger carrots more BG-friendly than the small enticingly sweet ones. I made the girls in the greengrocers ROTFL when I asked for some Linford Christies

I'm not sure whether the larger carrots or the smaller ones would raise blood sugars more. If you are a diabetic it is always best to check your blood sugar meter readings!
