Roasted fish Italian style

Well Friday comes around again ... and fish is on the menu plans, well why not!
This very easy recipe idea just jazzes up white fish in an Italian style. Why not give it a try ...

Ingredients:
Serves Four

4 fillets of firm white fish
1 tbsp olive oil
500g cherry tomatoes
50g black olives
25g pine nuts
large handful of fresh basil leaves
salt and pepper for seasoning

Method:

1. Preheat the oven to fan 180C/ conventional 200C/gas 6. Take the fish fillets with the skin on, and season with salt and pepper. Heat the olive oil in a large pan and cook the fillets skin side down for 2-3 minutes until just crisp. Transfer to a large roasting tin, skin side down.
2. Cut the cherry tomatoes in half and scatter around the fillets. Cut the olives in half and scatter over the tomatoes, followed by the pine nuts. Season.
Put the tray in the oven and bake for 12-15 minutes, until the fish is tender. 

3. Remove from the oven and scatter the tomatoes with a the basil leaves. Spoon onto four warm plates and top each with fish. Drizzle with a little extra virgin olive oil.

Served with some buttery mashed swede, the LCHF way!

I appear to be having a high fish week, but mostly oily rather than the white variety - (tinned) red salmon, smoked mackerel, crevettes with avocado, probably griddled squid tomorrow, then at least two more meals out of the mackerel. By then it'll be monday and I'll have to decide what to buy off the van for next week. It's a hard life, this low carb thing.

Chris, as always thank you for your comment. I love the LCHF lifestyle and the choice and variety that is open to us makes for great menu plans. Why not have fish quite a lot some weeks, it tastes great cooked with many of the low carb vegetables.

Perhaps next week you may include liver, beef, pork, lamb, chicken or even lobsters!!! There is so much to choose from on this lifestyle ...
