Courgette and Feta Cheese Salad

Whether you are looking for a weekend or a weekday lunch - this idea could be just what you are looking for. All you need is four ingredients, a timer with ten minutes on the clock, and you’re off !

So here is your starter for ten - the ingredients and method to make this very simple and tasty Mediterranean style salad. 


Ingredients (serves four)
2 courgettes
100g bag rocket leaves
200g pack feta cheese, crumbled
Bunch mint, leaves picked

Method
Peel the courgettes into long ribbons with a potato peeler.
Arrange with the rocket on a large platter.
Scatter over the feta and mint leaves, and drizzle on your favourite dressing.

I know once you’ve made it you will sit down and enjoy it. Served by itself or with some lovely meat …. the choice is yours. Why not enjoy, a little bit of the Mediterranean feel in the comfort of your home.

Another good idea - thanks.

You may find the smaller courgettes are better for this salad, the larger ones are better cooked, well that's what I often find.
