Tonight's low carb very economical meal


Today in Sainsbury's I bought 520 grams, 7 fillets of frozen pollock fish for £1.68 from the basics range. The leeks in tonight's meal cost approximately 75 pence, the cream cost around 60 pence, the cheese from the basics range around 50 pence. Cost per meal approximately £1.34. (just over 2 US dollars). Who says low carb food has to be expensive. Pollock so much cheaper than cod and in a fish bake it's hard to tell the difference.

Defrost three and a half fish fillets (approx 250 grams) and cut into pieces about an inch square (25mm). Place in an oven proof dish. Chop up two leeks and place over the fish. Cover fish and leeks with double cream and sprinkle over some mixed herbs, salt and pepper. Bake for 20 minutes at 200c. Remove from oven and cover with grated cheddar cheese. Return to oven and remove when cheese has turned golden brown. Serves two.

Very low carb, takes 5 minutes to prepare and tastes great. Enjoy with a glass of chilled white wine, Bon Appétit !

We like the grated cheese added to this. It blends in so well.

The sauce is so easy to do (pour and it's done) and it gives an extra special creamy taste.
